Ingredients

For a wafer base
1 cup almond flour (fine)
1 tbsp tapioca flour/arrowroot/ corn starch (improves binding + flexibility)
1 tbsp coconut flour /dessicated coconut
1 tbsp oil (coconut oil, olive oil, or neutral oil)
3–4 tbsp warm water (add gradually)
Pinch of salt
½ tsp vanilla
1–2 tsp coconut sugar or jaggery powder
For apple topping
2 apples, finely chopped (peeled or unpeeled)
3 tsp coconut sugar/jaggery
½ tsp cinnamon powder
2–3 tbsp water
1–2 tsp lemon juice
Pinch of salt
¼ tsp vanilla
A pinch of nutmeg
For garnish
Slivered almond, pistachio, rose petals/ mint leaves/ cranberries
Prepare the Waffle Base Dough- In a bowl, combine almond flour, tapioca/3arrowroot flour, coconut flour, and salt; then add oil and gradually mix in warm water, one tablespoon at a time, using your hands to form a soft, pliable dough that is neither sticky nor dry, and let it rest for 5 minutes to allow the almond flour to absorb moisture and firm up.
If too sticky: add 1–2 tsp almond flour.
If dry or cracking: add 1 tsp warm water.


Shape and Cook the Waffle Bases- To prepare the base, divide it into 10 equal balls. Place each ball between two sheets of parchment and press it into a disc. You can flatten the dough into a disc of the required thickness.
Oven- Bake at 170°C / 340°F for 10–12 minutes, flipping halfway through.
Air Fryer- 160°C / 320°F for 6–7 min
Pan -Low heat until golden and firm, then cool.
When the edges turn golden, they are done. Allow them to cool completely to achieve a crisp texture.


Make the Apple Topping - To make the apple filling, add 3 tbsp of water to a pan. Add chopped apples and cook on medium-low for 2 minutes. Add coconut sugar, cinnamon, salt, and vanilla. Cook for 5–7 minutes, stirring occasionally. Add 1–2 tbsp extra water if needed to prevent sticking. Apples should become soft, glossy, and lightly caramelized from the melted jaggery — even without oil. Turn off the heat. Add lemon juice (and vanilla, if using). Mix gently.



Assemble and Garnish- To serve, add a dollop of apple filling on the base, garnish with your favorite topping, and enjoy.

Allow the crisps to cool completely so they firm up properly.
Spoon the apple topping on just before serving.
