Ingredients

 ½ cup Black chickpeas (soaked overnight and cooked until soft)

 4 cups Fresh arugula

1 medium Cucumber (diced)

4 small radishes (finely chopped)

1 medium Apple (chopped)

1 cup  Grapes (chopped)

½ cup Pomegranate arils

1 medium Onion (finely chopped)

2 to 4  Green chillies: (finely minced, adjusted to taste)

Zingy Cumin Dressing

1 tbsp Lemon juice (freshly squeezed)

1 tsp roasted cumin powder

½ tsp Black pepper powder

½ tsp Black salt (Kala Namak)

1 tbsp extra virgin olive oil


Directions

1. Prepare the Dressing: In a small bowl or jar, combine the fresh lemon juice, roasted cumin powder, black pepper powder, black salt, and olive oil. Whisk briskly with a fork or seal the jar and shake vigorously until the oil and lemon juice blend completely.

2. Assemble the Salad Base: Combine greens, legumes, and fresh produce.

In a large mixing bowl, layer the fresh arugula as the base. Add the cooked black chickpeas, diced cucumber, chopped radish, apple, grapes, pomegranate arils, chopped onion, and minced green chilies.
