 Ingredients


Cajun-Spiced Tofu & Pineapple Skewers ingredients

  • 1/2 block firm or extra-firm tofu (7oz / 200 g), pressed and cut into 1" cubes

  • 1 red bell pepper, cut into 1” squares

  • 1 red onion, cut into chunks or petals

  •  2 cups fresh pineapple, cubed

  • 1 Tbsp Ginger garlic paste

  • 1 ½ tbsp neutral oil

  • 1 ½ tbsp Cajun seasoning.

  • Salt to taste (if Cajun spice is unsalted)


 

 

Directions

1. Mix the marinade: In a small bowl, mix Cajun spice, ginger-garlic paste, and oil. If you want the marinade to be flowy, add pineapple juice.

2 . Prep the Tofu

Press tofu for 15–30 minutes (or pat dry well). Toss tofu cubes with 1 tbsp oil and half the Cajun spice. Let marinate for at least 15 minutes or overnight in the fridge for a deeper flavor.

3. Prepare Veggies & Pineapple

Toss bell pepper, onion, and pineapple in a separate bowl with the remaining oil and Cajun spice.

4. Assemble Skewers

Thread tofu, pineapple, pepper, and onion alternately onto skewers.

Tip: Begin and end with something firm (like tofu or pepper) to help keep everything in place.


4. Bake

Preheat oven to 400°F (200°C). Line a baking tray with parchment. Place skewers in a single layer, leaving space between. Bake for 25–30 minutes, flipping halfway through, until tofu edges are crisp and everything is caramelized.

(Optional: Broil for 1–2 minutes at the end for a charred finish.)
