Ingredients

  • 1 cup red lentils (soaked overnight)

  • 1 large beetroot (grated)

  • 1 medium onion (chopped)

  • 2 medium tomatoes (chopped)

  • ½ tsp cumin seeds

  • ½ tsp turmeric powder

  • ½ tsp black pepper powder

  • 1 tbsp ginger-garlic paste

  • ½–1 tsp garam masala

  • ½ tsp red chili powder (optional)

  • 1 tbsp oil (optional)

  • 1 tbsp cilantro (chopped)

  • Lemon juice (to finish)

  • Salt to taste


Directions

1. Cook the Lentils: Cook 1 cup red lentils with 2 cups water and salt in a traditional pressure cooker on medium heat until 1 whistle. For a stove‑top pot, rinse the lentils, combine with water and salt, bring to a boil, then simmer on low for 12–15 minutes until soft. For an Instant Pot, cook on High Pressure for 3 minutes, then do a 5-minute natural release.

2. Build the Flavor Base: Heat the oil in a pot, then add cumin seeds and let them crackle. On medium heat, sauté the onions for about 3 minutes, then add the ginger‑garlic paste and sauté for 1 minute. Add salt and all spices except garam masala. Add tomatoes and sauté for 7–8 minutes, adding a little lentil broth if the spices begin to dry out.

3. Cook the Beetroot: Stir in the grated beetroot and cook for 5 minutes, until it softens and blends with the masala.

4. Combine and Simmer. Add the cooked lentils to the pot, then add garam masala and ¼ cup of water. Cover and let the curry simmer for 5 minutes so the flavors come together.
