Ingredients

Batter base:

  • 1 cup red lentils (soaked 3–4 hours, drained)

  • 3 tbsp thick yogurt (or unsweetened vegan yogurt)

  • 1/2 cup  (3.5oz)firm tofu ( pressed)

  • 1 tbsp olive oil

  • 3 tbsp oat flour

  • 1 tbsp semolina/Rice flour

  • ¼  tsp baking soda

  • ½  tsp baking powder

Vegetables:

  • ¼ cup grated carrot (squeezed)

  • ¼ cup broccoli (finely chopped)

  • ¼ cup spinach (chopped)

Aromatics (flavor base):

  • 2 tbsp finely chopped onion

  • 2 garlic cloves (minced)

  • 1–2 tsp olive oil (for sautéing)

Seasoning:

  • ¾–1 tsp salt (adjust it as per taste)

  • ½ tsp black pepper

  • 1¼ tsp dried Italian herbs (oregano + basil + thyme)

  • ½ tsp chili flakes (optional)

  • 2 tsp lemon juice + ½ tsp zest

  • 3 tbsp sun-dried tomatoes (rinsed, soaked in hot water, and finely chopped)

  • 1 tbsp nutritional yeast

  • 1 tbsp Pumpkin seeds

  • 1 tbsp sesame seeds

 

Directions

  1. Sauté the aromatics

    Heat 1–2 tsp olive oil. Add the onion and garlic; cook for 6-7 minutes over a low-medium flame, until golden brown and soft. Cool it.

  2. Blend the batter

    Blend soaked lentils, yogurt, olive oil, and tofu into a thick, smooth batter.

  3. Combine Everything

Transfer to a bowl. Mix in oat flour, semolina/rice flour, baking soda, baking powder, Italian seasoning, chili flakes, lemon juice, lemon zest, vegetables, sun-dried tomato, nutritional yeast, and salt. Mix it thoroughly and rest it for 5 mins. Mix the sauteed onion and garlic mixture.

  1. Bake

    Preheat oven to 350°F (175°C): grease or line muffin tray. Fill ¾ full. Sprinkle pumpkin seeds and sesame seeds. Bake 25-30 minutes until golden and set.

  • Keep the batter thick and scoopable. This ensures the muffins hold their structure and bake evenly.
