Ingredients

½ cup pearl barley (soaked)
7 oz extra-firm tofu
½ cup edamame (frozen)
6 oz button mushrooms (chopped)
½ cup carrots (chopped)
½ cup onions (chopped)
3 stalks spring onions (white and green parts separated and chopped)
3 garlic cloves, minced
1 tbsp gochujang sauce
1 tbsp soy sauce
1 tbsp rice vinegar
½ tbsp maple syrup
1 tbsp oil
¼ tsp black pepper powder
½ tsp salt (or as per taste)
Sesame seeds
Chili flakes (optional)
Directions
Cook the barley. Soak ½ cup of barley in 1½ cups of water with a pinch of salt. Simmer 25 minutes on low–medium heat until tender. Set aside.
Prep the tofu (optional): Place tofu in hot water for 5 minutes. Remove, squeeze excess water, and cut into bite-sized cubes. (This step is totally optional, but it allows tofu to absorb flavors better.)

Crisp the tofu. Brush a pan with oil and sear the tofu on both sides until golden and crisp. Do not overcrowd the pan.

Make the sauce. Mix gochujang, soy sauce, vinegar, maple syrup, pepper, and minced garlic in a bowl.

Sauté aromatics. In the same pan, heat oil and sauté onions and the white part of the spring onions for 5 minutes.

Cook the vegetables. Add mushrooms and sauté 3 minutes. Add edamame and cook 5 minutes. Add carrots and sauté 3 minutes.

Combine. Pour in the gochujang sauce and mix well. Add cooked barley and tofu. Toss everything together. Adjust the seasoning.



Finish by garnishing with spring onion, sesame seeds, and chili flakes.
