Ingredients

  • 1 cup Sorghum flour (jowar)

  • ½ cup Chickpea flour (Besan)

  • ¼  cup rice flour

  • 14 oz tofu (crushed)

  • 1 carrot (grated)

  • 1 onion (finely chopped)

  • 5–6 cilantro stalks (chopped)

  • 2–3 garlic cloves

  • 1 inch of ginger

  • 2 green chilies

  • 1 tsp carom seeds

  • 2 tbsp sesame seeds

  • ¼ tsp asafoetida

  • ½ tsp garam masala

  • ½ tsp turmeric powder

  • 1½ tbsp oil

  • Salt to taste

  • Water as needed


Directions

Prepare the Flavor Base

On a chopping board, add cilantro, ginger, garlic, and green chilies. Chop them coarsely or use a hand chopper.

Make the Dough

In a large bowl, combine jowar flour, besan, rice flour, crushed tofu, grated carrot, chopped onion, chopped herb mixture, sesame seeds, carom seeds, asafoetida, garam masala, turmeric powder, oil, and salt.

Gradually add water and knead into a smooth dough.

Divide the dough into 10 equal portions.

Cook as Waffles

Apply a thin layer of oil on both sides of the waffle iron.

Place one dough ball onto the waffle maker and gently press.
