Ease of Cooking Teesi Sajman – A Nourishing Flaxseed & Bottle Gourd Side Dish
Even if you’re new to traditional Indian cooking, this recipe is very approachable. It uses common pantry ingredients, requires no complicated techniques, and allows for one-pan preparation. It is perfect for everyday meals.

Preparation Time: 10 minutes
Cooking Time: 25–30 minutes
Total Time- 35-40 mins
Ingredients

Bottle gourd – 1 medium (chopped)
Flax seeds – ½ cup
Coriander seeds – 1 tbsp
Bay leaf – 1
Dry red chili – 2–3
Oil (preferably mustard oil) – 1 tbsp
Cumin seeds – 1 tsp
Green chili – 1
Turmeric powder – ½ tsp
Salt – as per taste
Directions
Prepare the Flaxseed Spice Mix
In a heavy-bottomed stainless steel wok or pot, dry-roast flax seeds, coriander seeds, red chilies, and bay leaf over medium heat for about 4 minutes. Let it cool completely, then grind into a coarse powder.


Build the Base Flavor
In the same wok, add mustard oil. Once heated, add cumin seeds and let them splutter. Add chopped green chili.

Cook the Bottle Gourd
Add chopped bottle gourd along with turmeric and salt. Cover and cook on low to medium flame for about 20 minutes. Stir occasionally.
Tip: Do not add too much salt at this stage, as the bottle gourd reduces in volume after cooking.


The Finishing Touch: Add about ½ cup of the prepared flaxseed mixture to the cooked bottle gourd. Mix well, then let it cook for another 2–3 minutes to let the flavors blend beautifully.



Tips & Cautions
Do not overheat flaxseeds while roasting—they can turn bitter.
Always cool before grinding to preserve nutrients and flavor.
The roasted flaxseed powder can be made in larger batches and stored in an airtight jar.
