Ingredients

Tomato & Moringa Leaf Soup
  • Tomato – 4

  • Moringa leaves – 1 cup (loosely packed)

  • Garlic – 2 pods, crushed

  • Black pepper – ½ tsp

  • Italian seasoning – 1 tsp

  • Oil – 1 tsp

  • Salt – as per taste

Directions

  1. Prepare the Moringa. Gently pluck the tender moringa leaves from the stems, discarding any fibrous stalks. Wash thoroughly, rinsing 2–3 times to remove any dirt.

  2. Blanch the Tomatoes. Score a small ‘X’ on the top of each tomato. Boil them in water for about 8 minutes or until the skin loosens. Allow them to cool for 5 minutes, then peel the skin. Reserve the tomato stock.

  3. Blend the Soup Base. Add the moringa leaves and peeled tomatoes to a blender. Pour in about ½ cup of the reserved stock and blend until smooth.

  4. Strain for a Smooth Texture (Optional) Strain the blended mixture if you prefer a lighter, silkier soup. This step is optional but recommended for a refined finish.

  5. Sauté and Simmer. Heat oil in a pot over medium heat. Add crushed garlic and sauté for about 30 seconds until aromatic. Pour in the blended (or strained) mixture. Add pepper, salt, and Italian seasoning. Let the soup simmer gently for 5 minutes. Adjust seasoning and consistency using more stock if needed. Serve warm and enjoy.

Tip

  1. If fresh moringa leaves are not available, moringa leaf powder can be used as a convenient substitute. Since the powder is highly concentrated, only a small amount is needed. Use ½ to 1 tsp

    moringa powder for this recipe. Add it during the simmering stage, after the soup has been blended and strained.

  2. Avoid overcooking moringa leaves, as prolonged heat can reduce their nutritional value.
