Ingredients

For the Tacos
20 small tortillas (any kind – corn or whole wheat work well)
1–2 avocados, sliced
2 bowls of chopped lettuce
1 red bell pepper, thinly sliced
For the Cauliflower Marinade
½ cup roasted peanuts
3–4 green chilies
½ inch piece of ginger
2–3 garlic cloves
⅓ to ½ cup water (adjust for blendability)
1-2 tbsp oil
For Quick-Pickled Onions
1 medium onion, thinly sliced
Juice of 1 lemon
For the Tahini Dip
½ cup tahini
½ cup water
¼ cup lemon juice
2 garlic cloves, minced
¼ tsp black pepper
Salt, to taste
Directions
Pickle the Onions
In a small bowl, combine thinly sliced onions with the juice of 1 lemon. Stir well and let sit for at least 10–15 minutes to pickle lightly.
Make the Tahini Dip
Blend or whisk tahini, water, lemon juice, minced garlic, black pepper, and salt until smooth and creamy.


Prepare the Cauliflower Marinade
Combine roasted peanuts, green chilies, ginger, garlic, and water in a blender. Blend into a thick, pourable paste.


Prep the Cauliflower
Cut cauliflower into small florets. Place them in a bowl and pour hot water over them to cover. Let it sit for 5 minutes, then drain in a sieve.

Marinate the Cauliflower
Toss the drained cauliflower with the peanut marinade until evenly coated.


Roast the Cauliflower
Preheat the oven to 400°F (200°C). Spread the marinated cauliflower on a lined baking sheet, spraying or drizzling with oil. Roast for 15 minutes, then broil on high for another 15 minutes until crispy and golden at the edges.


Warm the Tortillas
Heat tortillas one at a time on a dry skillet over medium heat, ~30 seconds per side, until warm and slightly charred.

Assemble the Tacos
Layer each tortilla with lettuce, roasted cauliflower, avocado slices, bell pepper, lemon-pickled onions, and a generous drizzle of tahini dip.
