¼ tsp turmeric powder
½ tsp cumin powder
Salt, to taste
For the Mango Salsa
1 ripe mango, diced
½ cup red onion, finely chopped
3 sweet red bell peppers, finely chopped
¼ cup cilantro, chopped
1–2 green chilies, finely chopped
2 tbsp lemon juice
Salt, to taste
For the Cashew-Cilantro Dressing
⅓ cup cashews, soaked
½ cup cilantro leaves
2 garlic cloves
1 tsp honey
2 tbsp lemon juice
Salt and black pepper, to taste
Water, as needed for blending
For the Salad
4 cups romaine lettuce, chopped
1 cup cooked quinoa
1 cup steamed corn kernels
1 avocado, diced
Optional Garnishes
Lime wedges
Pumpkin seeds or any seeds for extra crunch
Directions
Cook the Beans
In a pressure cooker, combine the soaked black beans, 2 cups of water, turmeric powder, cumin powder, and salt. Cook for 6–7 whistles until tender. Alternatively, cook in an Instant Pot on high pressure for 10 minutes. Allow the pressure to release naturally. Or you can also use canned beans without any seasoning.


Steam the Corn
Place the corn kernels in a steamer and steam for about 5 minutes. Season lightly with salt and pepper.

Cook the Quinoa
Rinse the quinoa thoroughly 2–3 times. Add 1 cup of water and cook until the quinoa is fluffy and the water is absorbed, about 5 minutes.
Make the Cashew-Cilantro Dressing
Add the soaked cashews, cilantro, garlic, lemon juice, honey, salt, pepper, and ¼ cup water to a blender. Blend until smooth and creamy. Add more water if needed to reach your desired consistency.

Prepare the Mango Salsa
In a medium bowl, combine the diced mango, chopped onion, bell peppers, cilantro, chilies, salt, and lemon juice. Toss gently and set aside.

Assemble the Salad
In a large serving bowl, combine the cooked beans, quinoa, steamed corn, romaine lettuce, avocado, and mango salsa. Drizzle the cashew-cilantro dressing over the top and toss gently until everything is evenly coated. Garnish with pumpkin seeds and serve with lime wedges if desired.
