This recipe is inspired by the traditional desserts relished during Sankranti celebrations. To make it more accessible for everyday cooking, jaggery has been replaced with molasses, preserving the spirit of the dish while offering a convenient, nutrient-rich alternative.

Ingredients

  • Sesame seeds – ½ cup, roasted

  • Peanuts – ½ cup, roasted and skinned

  • Molasses – 2 to 3 tablespoons (adjust to taste)

  • Cardamom – 2 to 3 pods, finely powdered

  • Pistachios – 2 to 3, crushed (optional, for garnish)


Directions

  1. Roast the nuts and seeds - Heat a heavy-bottomed pan over low to medium heat. Dry roast the peanuts and sesame seeds separately, stirring continuously to ensure even roasting. Once aromatic and lightly golden, remove from heat and set aside to cool for about 15 minutes.

  2. Grind to a coarse texture. Transfer the cooled, roasted sesame seeds and peanuts to a mixer or food processor. Pulse until you achieve a coarse, grainy powder. Avoid over-grinding, as the mixture should retain some texture.

  3. Bring the mixture together. In a large bowl, combine the ground nut-and-seed mixture with molasses and powdered cardamom. Mix thoroughly using a spoon or clean hands until it comes together into a soft, pliable dough.

  4. Shape and slice. Line a tray or baking dish with parchment paper. Spread the mixture evenly, pressing it down firmly to form a uniform layer. While still soft, use a sharp knife to cut into your desired shapes or squares.

    • For a crisp texture: Bake at 300°F (150°C) for 10–12 minutes, or until lightly crisp.

    • For a no-bake option: Skip baking and place the tray in the refrigerator until set for a chewy, traditional texture.

  6. Garnish and cool. If baking, sprinkle crushed pistachios over the bites while they are still warm, gently pressing them in. Allow to cool completely before serving or storing.

Tips

  • Roast gently and patiently: Always roast sesame seeds and peanuts on low to medium heat, stirring constantly. This enhances flavor without burning and prevents bitterness.

  • Cool before grinding: Allow the roasted nuts and seeds to cool completely before grinding. Grinding while warm can release excess oil, making the mixture greasy.

  • Keep the texture coarse: Pulse rather than grind continuously. A slightly coarse texture gives these bites a pleasant crunch and prevents them from turning oily.

  • Adjust sweetness naturally: Start with two tablespoons of molasses and add more only if needed. Molasses has a strong flavor, and a little goes a long way.


Cautions

  • Avoid over-roasting: Sesame seeds burn quickly and can turn bitter. Remove them from the heat as soon as they begin to pop and release aroma.

  • Do not over-bake: Baking longer than 12 minutes can make the bites overly hard once cooled. They will continue to firm up as they rest.
